I hope everyone had a wonderful Thanksgiving.  I know I sure did, and in fact I am still stuffed.  I made and took so many food photos this week I will be set for months on posting recipes.  So be prepared for some food!

We have all our Christmas decorations down from the attic and I can’t wait to start decorating!  I am in fact in search of a new tree as the lights went out on mine, and it is such a pain to take the old ones off and re-string.  So pre-lit tree shopping I go.

We have a super busy week ahead, I am busy planning the boys 3rd birthday party this weekend, and I am also reviewing a menu planning item.  So I have some new recipes on the menu this week.  Don’t worry there will be more detail about this in a few weeks.

Wow, how fun was yesterday?  The boys had a blast dressing up, trick or treating and handing out candy.  If I can get their cowboy outfits off of them today, it will be a miracle.

On other news the Pumpkin Link-up was a great success, thank you for everyone that link-up and visited the links.  I am so amazed at some of the awesome recipes, I just can’t wait to try them.

As I am planning this week’s menu I am still recovering from our 10 year high school reunion last night.  I had such a blast and ending up partying till the wee hours of the morning (5 am).  And yes I am feeling it today, I am definitely not 18 anymore.  But I would certainly do it all over again, fun fun fun.

I am still incorporating plenty of Pumpkin recipes into my menu and trying some lower fat versions of things, fat free milk, etc.

I am still shredding along, and completed week 3 and started level 2 last week, though I didn’t post about it. One more week on level 2 this week, and I can already feel a vast improvement in my energy levels and I feel stronger, loving that.

It’s pumpkin time again in our house, and I am desperately thinking of recipes and new ideas, it’s so bad in fact that I heard there could possibly be a canned pumpkin shortage, so every time I go to the store I pick up at least 4 cans.  Obsessed much??  So far I think I’ve made at least 3 pumpkin recipes this week and have tons more to come.  I am probably going to do another pumpkin roundup soon.

Our first cold front has arrived here in South Texas, a mean 60 degrees when I woke up this morning.  Oh cold-ish weather how I’ve missed you.  It’s a tradition for me to make Texas soup on the first cold snap of the year, and you can bet I’m keeping it.

This week I start the 30 Day Shred Challenge.  It shouldn’t take up that much time, only about 26 minutes, but the soreness and therefore grumpiness I can count on.  I really dislike being sore.  I am also planning on putting up some of my fall decorations, I really hope this spurs some cooler weather, I can dream can’t I?

I have a few projects lined up for this week, number 1 is get the boys big boy beds, yes I know were kind of late in that game, but they just love their cribs, and do so well, but now it is time.  Project #2 is to clean out my pantry, I have a infestation of pantry moths, they live in everything, just once I think I have taken care of them I see one flying around somewhere.  So I am taking every, pasta, flour, rice, oatmeal,etc out of my pantry and throwing them away.  It will hurt a bit, because my pantry is stocked, but then I can go buy new stuff, fun fun.

Thanks for all the egg recipes last week, I am still sorting through them trying to decide which to try.  DT’s birthday is this week so I will be making him a special birthday cake and dinner, we made the drunken pork chops last week and he loved them so much, I bet he asks for those again.  I will be posting the recipe this week.  I am also trying a new dessert for a labor day party.  And making a new dish for the boys; Ratatouille, they love the movie so I thought it would be fun to recreate the dish.  I’ll be sure to share the details.

Last week we planned on a garage sale, but it didn’t happen.  Seems like that each time, we’ve been planning this garage sale for 2 years now, lol.  We just have so much stuff, I don’t know honestly if it will ever happen, yikes!  This week I will be doing some cooking for a friend of mine that just had a precious baby boy.  I always think it’s so nice when people bring over food already prepared, just pop in the oven.  Two of my favorite recipes to make are friendship casserole and cheesy chicken enchiladas, both because they are easy to double,  freeze well, and they are delicious.
