It’s been a week since my last post, gosh I’ve been meaning to blog all week, but just haven’t gotten around to it.  I really need to get in the kitchen and cook up some new meals.  But we have been enjoying the beautiful Texas weather and planting our summer garden.  The chickens have really picked up on laying and we have tons of fresh eggs every single day.  So I’ve been using lots of eggs and selling quite a few as well.

I’m back, I’m back from the hell hole of sickness, and we survived.   Though now I swear I have a cold, ugh……  Anyways I am feeling well enough to leave the house, not sleep all day, and actually put on a little make-up, so yea!!

I also want to say thanks for all the sweet comments from my sickness blog post, it really made me feel good to know I have so many online buddies wishing us well.

This week I am keeping the menu pretty simple, a few of our favorite but super easy meals.  I know it is spring break for many but just a normal week for us.

Today’s presidents day!  Who knew?  I guess all the postal and bank employees are enjoying their day off.  We’ve been enjoying the beautiful weather outside the past few days with trips to the park and plenty of playing outside.

Happy Valentine’s day to you all. DT and I celebrated a day early by building fence for our chickens, that one’s huge for me, a great V-day present in fact.  We also barbecued steaks, ribs and potatoes, yummo.  In fact, I didn’t miss celebrating at all, although this morning I found 2 sweet cards waiting for me by the coffee maker, and that surely made me smile.

Yesterday I found the mint chocolate covered Oreos in our pantry leftover from Christmas and I decided it’s been long enough since I’ve had a sweet, let me give one a try, and much to my surprise it tasted………….. awesome, of course.  But not much later in the day I got the worst headache I’ve had in years, coincidence?  I might not ever know, but I can say this, that one oreo was all I ate.  I felt satisfied and not hungry for more, where as before I might have eaten at least 5 or 6.

My main goal with this sugar and gluten free diet is to re-train my brain to eating occasional desserts and breads, to not crave them so much and to eat a healthy balance with healthy foods.  I think it’s working, slowly.  I still have my moments, but for now I am sticking with my diet and healthy eating.

I am drawing a blank this week on what is going on, nothing much I guess.  My diet is still going strong, I didn’t lose anymore this week so I am going to go strong working out and hope this gives me the extra push to keep losing.  I’ve been selling lots of hatching eggs, and chicks and it’s really such a fun hobby for me.  I enjoy seeing people so pleased about getting chickens.

Last week Mom and I bought a really cute toy organizer for the boy’s room.  Their closet has been a wreck for months now and a total eye sore, so it was time.  2 trash bags and 3 donation bags later and we have a clean organized room, yippee!  Now if only I could convince them to keep their toys in the room and not all over my house.

My diet is going well.  I weighed in this morning and another 3lb loss, making it a total of 13lbs in 3 weeks.  I am very happy with that.  I am eating really well, as you can see below, just not junk!  I was really surprised at how much junk I was really eating.  My grocery bill has gone up slightly because of the extra fresh fruits, veggies and natural nuts that I am now buying.  But our eating out has gone down, so really we are saving money and eating much better.

The diet is still going really well,  and I am still eating well, I’ve had a few slip ups but mostly following perfectly sugar and gluten free.  I am down about 10lbs, in 2 weeks is pretty good I think.  I am going to start shredding again this week and I hope that will help me continue to lose.

1 week down on my sugar and gluten free diet, and my recipe making juices are flowing.  I am like a painter on a new canvas, inspired.  Therefore I will be featuring some new recipes this week.  Some naturally sugar and gluten free, others are accommodated for those things.  Also, did I mention I’ve lost about 7 lbs, in one week!!!!  Wow is all I can say to that, I can’t believe how much junk I was eating.  I’ve also noticed a boost in my energy.  I don’t have the afternoon sluggish feeling anymore, and that is a great thing.
I know this diet won’t last forever but my goal is to re-train myself for healthier options, to go to the fruits and veggies, to naturally crave those things.  Years ago in college I lost lots of weight and kept it off for years and ate so very well, I didn’t crave junk foods, but healthy foods.  I want to be like that again.  I just have to slowly re-teach my stubborn self.

As a resolution to healthier eating, DT and I are kicking off 2011 with our sugar and gluten free diet.   We did this last year with some awesome results and I am excited to do it again.  Giving up sugar (for me) is killer, but doable.  I just have to be sure to have a plan and stick with it and be very aware of what I am eating.  As the boys are still eating  a normal diet, I almost snuck a piece of their biscuit this morning without thinking.

Another busy week ahead and hopefully the cool weather is here to stay.  We’ve had so much back and forth from cold to hot I am ready for the cold to stay.  I love going outside and getting cold and then coming in for a nice warm bowl of soup.  Love it.   I am also planning on working on my ornament eggs and posting about them sometime this week.  I am so happy that you all seemed so interested in them.  I also need to take the boys Christmas pictures and order my 50 free from shutterfly.  I love this time of year so busy and fun.
