OMG it is hott!!!!  But I want soup????  Makes good sense doesn’t it??  Crockpot posole to the rescue!!  I am still bummed we didn’t get any rain from the tropical storm Dan (or was it Don?).  We desperately need some rain!!

I let the sprinkler go on the garden all night and it still looks dry!

I’m back, and my computer is back up and running.  And they were able to recover my data, which apparently I had lots of (photos).  So I have successfully backed everything up and hopefully this will never happen again, lesson learned.  Word to the wise, go back up your computer now!!

It’s been a few weeks since I posted my Menu plan, and a nice little break for me. But it’s mostly because I’ve we’ve all been sick.  Fighting the never ending summer cold, but finally last friday enough was enough and I went to the doctor and got some meds and I am feeling much better.
I did manage to make a few of  my favorite meals to stretch over the course of the sickness along with some yummy cupcakes for my mom’s birthday.

Woo, what a wonderful, relaxing fun family vacation.  Lots of fun in the sun, good eats and family.  Now it’s back to reality and I am hitting the diet and exercise hard, way to many sweets, beers and all around good food this weekend.  As it should be of course.  This week is also my birthday the big 2-9 on Wednesday.  No big plans probably maybe a trip to my favorite restaurant and some margarita’s sounds nice.
I also came home to this glorious amount of tomatoes!  So I will be busy with those.

Our garden is overflowing with wonderful veggies, so as always I am making some new and old favorite recipes.  I am going to be really busy in the kitchen this week.  I prefer to eat my veggies fresh, but if I must, I do resort to freezing; tomatoes and shredded zucchini are two that freeze well. My mom has been shredding zucchini in everything, meatloaf, spaghetti, etc.  It’s an easy way to add a veggie to your meal and picky eaters will never notice.

Here’s some of our lovely garden produce.

Can’t beat garden fresh tomatoes, my absolute favorite.

How about some zucchini and yellow squash, cucumbers, purple cabbage, green beans, okra, bell pepper, jalapenos.

I hope everyone had a relaxing mother’s day full of pampering and your family.  We had a wonderful time on our anniversary trip this weekend, lots of great food, places and quality time together, it sure was nice.  Now were back to reality, of work, cooking, cleaning and life. It sure was good to get away for just a little bit, I highly recommend it if you haven’t in a while.

I am very excited about this weekend, DT and I are celebrating our 5th anniversary!  We are taking a weekend trip, just the two of us!  We are going back to the place we got engaged, it will be just lovely.  I can’t wait!

It’s time to get back into menu planning after my extended break from blogging.  I am physically feeling much better and like eating and cooking again so that’s a good thing.  If the past two weeks have taught me anything it that life is fragile and to appreciate it more.  I just assumed I would have a normal healthy pregnancy and my Pop-po would live forever, and when that didn’t happen it was devastating.    I will try to make the most of everyday and strive to be more like my Pop-po each day too.
