Our garden is overflowing with wonderful veggies, so as always I am making some new and old favorite recipes.  I am going to be really busy in the kitchen this week.  I prefer to eat my veggies fresh, but if I must, I do resort to freezing; tomatoes and shredded zucchini are two that freeze well. My mom has been shredding zucchini in everything, meatloaf, spaghetti, etc.  No one ever It’s  a easy way to add a veggie to your meal and picky eaters will never notice.

  1. Fried Green Tomatoes are DELICIOUS! They have a tart flavor that is so yummy! I like to press the slices into panko to give them a crunchier bite. We’re also having German Pancakes this week! Brilliant minds think alike!
