It’s a busy week ahead we are planning a garage sale and the task of cleaning out our garage is huge!  I am not particularly looking forward to it, but it will be nice to sell or give away lots and lots of stuff.  We haven’t had one in over 2 years and it amazing how much stuff accumulates.  I have also spent my entire weekend hovering over my incubator and watching 15 little chicks hatch!  Yes I finally had a successful hatch, OMG they are so cute!!  Don’t worry more to come later about my new little fuzzy butts.  Hope your enjoying your last weeks of summer break.  How will you spend them?

As the boys are getting older (2 1/2) they are having more and more requests for foods to eat.  For instance just tonight they wanted oatmeal for dinner, easy enough, right?  In fact they each ate 3 bowls!  But since they are taking more interest in the foods they are eating I’ve decided to try letting them “help” me in the kitchen.  We are starting off  with Stuffed Corn Tortillas and if all goes well hopefully the recipe will be posted this week.  Wish us luck!

This weekend we spent some time in the garden, DT tilling and removing the old squash and green beans, and me planting my fall pumpkin, winter squashes and gourds.  They take anywhere from 90-120 days to produce so now is the time to plant them.  I haven’t had much luck in the past with growing pumpkins, but I am hoping this is my year.  I have some oldies but goodies on the menu this week and just in time, I’ve been in a bit of a runt when it comes to cooking dinner lately.  So hopefully these will pull me out.

It’s been a few weeks since I’ve done a menu plan and my cooking has suffered.  In fact I haven’t cooked much and have been frantic trying to figure out what to cook.  So I am glad to get back in the groove of menu planning, it saves me unnecessary panic.

DT is home this week so I will be cooking some of his favorites and he will probably grill a time or to, which is always nice.

This week is going to be a busy yet fun one.  DT is going to be home which will be very nice but also coupled with lots of work we need to get done, or should I say he needs to get done.  And of course I will be making some of his favorite foods while he is home.

I also have a girls night dinner and drinks with some girlfriends and one in particular I haven’t seen in ages so that will be nice.  And I am also planning on going to see Eclipse Wednesday with some girlfriends, fun fun.

This will be a short week we are planning a trip to the Bay  and DT is gone till then so its just me and the boys.  While at the bay we will be celebrating Father’s Day and my brother’s and my birthday’s.  The trip is alot of fun, but it seems we have to pack the whole house!  It’s going to be a busy fun week.

Happy Memorial day!  We celebrated at my parents by having another great crawfish boil.  You know because every great holiday has to be accompanied by great food.  Oh and my Mom made an awesome peach cobbler that I will have to get the recipe to share with you all.  DT is going to be home most of this week as he was suppose to last week but ended up working.  So we have lots of garden veggie meals planned, a trip to the water park and possible the beach.  Not to mention some work on the chicken coop and his truck, poor thing he doesn’t get a break.

The garden is in full produce mode, we picked all the potatoes and have a table full, as well as tons of squash and cucumbers.  So I will be pickling, shredding, freezing and baking a lot this week.  I don’t really mind it because it will be so nice later on to pull baked goods from the freezer and shredded zucchini just ready to use.  DT will also be home most of this week so it will be nice having him around and I will cook bigger breakfasts as a result.  Lots of bacon and eggs, his favorite.  What do you have planned for this week?

This week DT will be home the majority of it so I am planning foods that he loves and also uses some of our garden veggies that we has massive massive amounts of.  I also am saddened to say that my hatching eggs yet again didn’t go so well out of 36 eggs only 6 hatched (one died just this morning).  With that in mind I don’t think I will ever be incubating eggs again, its just to heart breaking and stressful.  But I do have 5 beautiful perfectly healthy fuzzy butts.  I will post more about them later. Are you trying any new recipes this week?

I had a wonderful Mother’s day and enjoyed spending time with my family, DT and my special little boys.  They make me very proud to wear the title, Mom.  I also failed to mention that last week was our 4th wedding Anniversary.  We had a quiet evening of going out to eat and enjoying time together.  These past 4 years have really flown by.

We have squash and tons of it! Zucchini, yellow squash and even pattypan squash, So this week I will be using it as much as possible.  Do you have any good squash recipes to share?

This friday is also the hatch date for my eggs, 35 going into lock down and hoping at least half hatch.  Wish me luck!

Its that time a year again for wild dewberries.  My dad picks tons each year and I always make a least a few cobblers to show my gratitude.  This year the dewberries are huge as big as your thumb!  Plump, ripe, and juicy.  Our garden zucchini is growing fast as well, by the end of this week I am sure we will have a few to pick.   I was looking at pictures of our summer garden last year and it’s amazing at what a huge difference in the growth of our garden this year.  I attribute that to our home grown fertilizer.  Otherwise known as chickens!!!

After a stressful egg hatching last week I am starting to feel a bit more like myself again.  A little more energy and motivation to do something other than obsess over non hatching chicks.  And I do it again in just 19 days, ahhh!  Any-who this past weekend DT and I went out to eat and like I usually am I was inspired to try to make what I had at home.  So I have a new restaurant meal planned as well as an old favorite restaurant inspired dish.  I just love eating out and then experimenting at home.  Our county fair is this week so I am sure we will be spending some time out their enjoying all the activities and I know the boys will just love it.  How’s your week looking?
