I had a wonderful Mother’s day and enjoyed spending time with my family, DT and my special little boys.  They make me very proud to wear the title, Mom.  I also failed to mention that last week was our 4th wedding Anniversary.  We had a quiet evening of going out to eat and enjoying time together.  These past 4 years have really flown by.

We have squash and tons of it! Zucchini, yellow squash and even pattypan squash, So this week I will be using it as much as possible.  Do you have any good squash recipes to share?

This friday is also the hatch date for my eggs, 35 going into lock down and hoping at least half hatch.  Wish me luck!

Goulash (using veggies from the garden)

  3. We haven’t got one zucchini plant this year… the beetles keep eating them all 🙁 I still have some seedlings but I’m scared to put them out because they too will just be eaten. Happy Anniversary and Mother’s Day, glad you had such a nice time.

  4. Love your site and used it a lot last year as I was trying to learn to preserve my garden crop. I found a great use for zucchini (yellow squash works too) and it uses a lot of it!! I canned a zucchini jam….it has very odd ingredients but it passed by my very picky husband. I just told him the other day that it really wasn’t strawberries in the jam but it was zucchini…he was SHOCKED!! My kids love it too and I figure it’s one more way to get veggies in their little bodies and know exactly where the jam came from…we’ve been using it all winter long and our favorite was using the strawberry and the orange. A huge hit!
