I’ve had an exciting or should be exciting weekend hovering over my chicken egg incubator, but I’m sad to say I’ve had absolutely no action.  The chicks due date is today to be exact but I was really hoping for some early takers.  Hopefully today I won’t spend most of the day hovering also but I will have some chicks hatching.  Wish me luck.  On other news I will also be busy cooking some of my favorite foods this week, cookies and soup.  What’s on your menu plan this week?

I am back to menu planning after a week off, it felt strange to not have my menu planned, and we unfortunately ate out more and ate more convenience foods like frozen pizza, etc.  I wasn’t organized at all or motivated to cook.  It was good to take a week off, but I am glad to be planning my menu with some healthier foods and new recipes this week.

Wow what a busy Bloggy Spring Break.  It was good to enjoy the time off the computer, but I missed it.  I missed everyone, and have lots of catching up to do.  What a week.  Unfortunately we didn’t get everything done we would have liked, but the duck/chicken coop is finished, the garden is partially planted, and the taxes are partially finished (I keep hoping the will magically finish themselves overnight).

It’s Spring Break, well not really for us, since none of us are in or working for a college anymore.  But DT will have off several days this week so it will be like a mini break for us, including me and my menu plan, though I do have some fun new meals plan, nothing extravagant.

I feel like I haven’t been blogging much lately, my life has been slightly consumed with chicks (I have 8 now) and I’ve even joined an online chicken lovers forum called Backyardchickens.com.  It’s so neat and the people there are wonderful and could answer every little chicken or duck question you could think of.  I can feel another chicken post coming soon, please bare with me.  You will be amazed at how big the chicks and ducks are, AMAZED!

We have lots of leftovers and tons of turnips and carrots from our garden, so I plan on freezing some of the carrots, and trying some new turnip dishes.

I am thinking about starting a weekly garden meme, that would show your garden progress each week, maybe start a new topic, like pest control, organic gardening, freezing and storing produce, and many many more topics.  I know many of you have a summer garden so I’d like to here from you if this might interest you.

This week I have a couple of new recipes (with links) that I am going to make.  There are so many great food bloggers and wonderful recipes going around, I am going to incorporate more into my weekly menu planning.  Be sure to check out the links and open yourself up to some wonderful new recipes and blogs.

Of course I will still have a few of my recipes floating around, because I love good stand-me-by recipes.  DT will be super excited to see chicken fried steak on the menu, this is is absolute favorite meal.   We have a freezer full of meat so I am happy to oblige.

Well last week’s egg cooking fest went very well, I am down to about 8 eggs but don’t worry those will go quickly and our chickens are still laying 4-5 each day. I don’t think were going to have a shortage any time soon.

On other news a friend of mine brought me a gallon of raw milk to try this week.  Have you heard or tried Raw milk before?  It basically whole milk that hasn’t been pasteurized.  I was a bit skeptical at first and even did a comparison taste test between store bought whole milk.  The flavor to me wasn’t hugely different but the raw milk has a yellow tinge color and cream had separated a bit at the top, it was so creamy and delicious.  I think she has converted me.  It reminds me when I dated a boy who’s family ran a Dairy Farm, they use to send us gallons of unpasteurized milk (Raw Milk), I never thought anything about it then, funny how things change.

Other than the milk and eggs I have a couple of really fun interesting recipes planned for this week.

Eggs Eggs Eggs! This week’s menu is inspired by the 3 dozen eggs we have in the fridge.  Our chickens are laying 4-5 each day and we almost can’t keep up.  Scrambled or fried eggs in the mornings are getting a bit routine, so I am mixing it up a bit and adding in some new eggy recipes.

Hope everyone had a great weekend and enjoyed the Superbowl, admittedly I didn’t even watch, who won??

Anyways, Valentines day is this weekend (Sunday in case it slipped your mind) and in our household its a big deal!!!  Well not really but we do love getting each-other something sweet or DT loves when I bake a strawberry cake or even red velvet cupcakes for him.  But since were sugar and gluten free right now we are trying to get a hold of ourselves.  Not that we haven’t cheated since Jan 1st but we’ve been pretty good considering.  I did break down and make some mini cherry cakes this weekend, and promise I only ate about 3 or 4 out of 50+. That’s  amazing for me seriously!  So far no big plans of our V-day, just a dinner at home, maybe if were lucky we could sneak out for a movie. (Mom, hint hint 🙂  Hope you have a great week.

62 weeks now I have been menu planning, it has become such a natural part of my week, I can’t imagine going back to not knowing what I am going to cook each week.  Each Saturday or Sunday morning I spend about 30 minutes (maybe not this long) preparing my menu for the week, deciding on what new recipes I am going to try and what family favorites we will eat.

Then I create my grocery list for the week and I am done, that’s it.  No more worrying what I am going to fix or if we have the ingredients to make it.  It’s simple and done.  Of course my menu plan is flexible and I can simply push back recipes if we didn’t make them that week or something came up.  I also like to make a few large dinners that we can eat more than once or for leftovers for lunch the next day.  I just love leftovers.

I can’t believe that its already the 4th week of our diet!  Much to my surprise it’s been easy.  Yes it takes more planning and thought, but really I don’t feel hungry or unsatisfied at all.  When I am hungry I eat!  I just choose to eat healthier things now, unlike before when I would grab chips or a cookie, now its almonds or fruit.  Though DT and I did go out on a date Saturday night and we splurged on bread, and desserts!  But then when I woke up this morning I felt like I had a hangover, wonder if it was a sugar hangover, I guess triple chocolate cake will do that to you.  Other than that we are back to healthy eating sugar and gluten free.  Our chickens are also keeping us stocked on eggs, so I am going to come up with some creative egg recipes over the next few weeks, so far we are getting 4 eggs a day.

We are heading into our  3rd week  on the sugar and gluten free diet and much to my surprise I have  lost about 6lbs, and DT lost 17lbs!!!!!  Yes 17lbs, how is this possible?????  Hmm, sometimes life just isn’t fair.  They say men lose weight easier, but seriously???  Other than that the diet has been pretty easy and I’ve adjusted so far with the occasional craving for bread or ice cream.  But we’ve been eating so many fruits and veggies I am staying nice and satisfied.
