I did much better with my grocery challenge this week and only spent $36 dollars.  For details check out this post.  I am still trying to use as much food as I can out of our freezer and pantry, and becoming creative when making dishes.  Its been kinda fun, but definitely takes more work.

Breakfasts:

Blueberry Muffins (using Plums instead of blueberries)

So last weeks “challenge” was a total bust. We went to visit family and friends out-of-town and totally blew our budget on gas and eating out.  But I will try to start my challenge, of $250 on groceries, entertainment, etc this week.  I don’t think we have any plans and hopefully I will be able to stick with it.

What do you have planned for the week?

This week is the start of a 1 month shopping challenge.  In it I will try to spend only $250 on all groceries, gas, entertainment, clothing, etc.  Not included is monthly bills, like mortgage, insurance, utilities, etc. We have tons of food in our freezer from meats, to veggies from the garden, so I am really going to focus on using what we have and becoming creative in our meal plans.  I will still buy milk, fresh fruits and necessities (like diapers), but I will try to make as much as I can and use foods from our freezer and pantry.  We also have okra and peppers still growing in our garden so I will use these as well and a constant supply of eggs now that we have chickens. Wish me luck!

DT is working this week, so were having some easy meals.  Though Wednesday is his birthday, we will celebrate on Friday when he gets back into town.

Monday: Mini Shepard’s Pie (recipe to come)

Tuesday: Lasagna, garlic bread and salad

Wednesday: Hot dogs, and beans

Thursday: Thai Turkey Taco

We have a busy week planned, and lots of cooking involved.  Recently one of my friends had twins and I am going to do a couple batch casseroles for her and the family.  And then while I am at it I will cook a batch for our family as well.  I also have my daring Bakers challenge coming up, and I bought some sugar plums at the grocery store so I am dying to make a pie or something, any ideas?

I haven’t done a Menu plan the last few weeks and as a result we have eaten out more and I have not cooked nearly as much, because I don’t have a plan!!  So I am happy to make my menu plan this week, it keeps me accountable and not wondering at 4pm what I am going to cook.  As of Wednesday I will be an official Stay At Home Mom (SAHM).  I plan on using my new status to the fullest and hopefully learning and striving for even more planning and structure.  But for now here goes.

I am in a kind of cooking funk lately, not sure why but I need to get out of it.  Basically this means I don’t want to cook.  I think its a combination of it being so hot and not feeling like cooking and heating up the house.  So I think we might just have sandwiches a few nights this week!

My weekly menu planning has changed a little bit since DT now is gone trucking most of the week.  I am cooking a little less eating more leftovers and cooking more on the weekends.  So this is what I have planned for this week.

Monday: Sticky Chicken in Crock pot with green beans (from the garden)

 Tuesday: Thanksgiving Cassserole (basically leftovers from thanksgiving, but I still like to use it for a quick yummy meal, layer in a casserole, leftover chicken, 1 -2 can of green beans (or I am using leftovers) and top with prepared stovetop stuffing, bake at 350 for 20 minutes, and serve with cranberry sauce, quick easy meal is always a hit at our house)

Wednesday:  Peking Pork Chops in the crock pot (recipe to come)

Thursday: Leftovers

Friday: Spaghetti using homemade marinara from the freezer

Today is my birthday!!  The big 27!  So I am not planning on cooking any meals, yea for me.  I think hubby is going to do something for lunch like Mexican food, so hopefully we will have leftovers for dinner.  He also gave me the best birthday gift a girl can ask for a New Camera the Nikon D40, and I am already in love with it!  So please expect better pictures from me in the future.

*EDITED TO ADD* My Chocolate Zucchini Cake recipe is also being featured today at 11th Heaven’ Homemaking Haven, so if you get a chance go check her out and her excellent way of dividing chore duties.

We have tons of garden veggies so I am planning on lots of veggies this week again.

I have lots of fresh veggies on the menu again this week, which I am sure if no surprise to you if you’ve been following my garden.  We leave this Friday for a four day weekend down at the bay and guess what!! I don’t have to plan that menu, yea!! Now I will probably cook here and there, but no menu planning for me, it will be glorious, lots of burgers and steaks and shrimp, yum!

All about Marinara sauce this week, with the abundance of garden fresh tomatoes, eggplant, and squash.  I am so excited to put these goodies to use.
