I can’t believe that its already the 4th week of our diet!  Much to my surprise it’s been easy.  Yes it takes more planning and thought, but really I don’t feel hungry or unsatisfied at all.  When I am hungry I eat!  I just choose to eat healthier things now, unlike before when I would grab chips or a cookie, now its almonds or fruit.  Though DT and I did go out on a date Saturday night and we splurged on bread, and desserts!  But then when I woke up this morning I felt like I had a hangover, wonder if it was a sugar hangover, I guess triple chocolate cake will do that to you.  Other than that we are back to healthy eating sugar and gluten free.  Our chickens are also keeping us stocked on eggs, so I am going to come up with some creative egg recipes over the next few weeks, so far we are getting 4 eggs a day.

Flour less Oatmeal Peanut Butter Cookies (just added 1 cup oatmeal and omitted sugar)

This week we have planned:

Breakfasts:

Fresh Fruit and Oatmeal

Fruit Smoothies
Orange Cranberry Muffins (sugar and gluten free- recipe to come)

Dinners:

Barbecue chicken with roasted cauliflower and asparagus

Seared Tuna with Mango salsa (recipe to come)

Desserts,  Snacks and Drinks:

Blackberry Cobbler (sugar and gluten free)

  2. I made sticky chicken this weekend! It was super easy and I don’t know why I hadn’t tried it before now! Plus I love the print a recipe option very nice! You will have to help me update my blog website once I become better at posting more often! I hope ya’ll are doing well!

  3. The baked eggs look good! My kids are getting bored with scrambled eggs so I should try that recipe.

    Love that sticky chicken…I make it at least once a week!
