Last week we planned on a garage sale, but it didn’t happen.  Seems like that each time, we’ve been planning this garage sale for 2 years now, lol.  We just have so much stuff, I don’t know honestly if it will ever happen, yikes!  This week I will be doing some cooking for a friend of mine that just had a precious baby boy.  I always think it’s so nice when people bring over food already prepared, just pop in the oven.  Two of my favorite recipes to make are friendship casserole and cheesy chicken enchiladas, both because they are easy to double,  freeze well, and they are delicious.

What is your favorite casserole?

Last week we enjoyed:

Barbecue Chicken Pizza

Flourless Peanut Butter Cookies

This week we have planned:

Breakfasts:

Bacon, Eggs and toast

Oatmeal with fresh fruit

Piglets with eggs and  fresh fruit

Dinners:

I didn’t get around to making this last week:

But I will be making 2 of each, one for my friend that just had a baby, and one for us to eat.

Friendship Casserole with salad and garlic bread

Sticky Chicken

Enchiladas de Pollo Y Queso (Cheesy Chicken Enchiladas) served with rice and beans

Snacks and desserts:

Banana Nut Muffins (recipe to come)

  1. looks like a tasty week at your place! we’re going to be gearing up for a garage sale here too — it’s a big undertaking!

  2. What a sweet friend you are to take dishes to your new-mommy friend. Both of those look delicious, btw! I’m going to have to try them soon. 🙂

  3. Yum! I have to agree, taking food to friends who just had a baby is the best gift ever! Have you tried Freecycle? We do that for most of our stuff because I hate organizing a yard sale and dealing with the kids at the same time. Too chaotic. Have fun!
