Our first cold front has arrived here in South Texas, a mean 60 degrees when I woke up this morning.  Oh cold-ish weather how I’ve missed you.  It’s a tradition for me to make Texas soup on the first cold snap of the year, and you can bet I’m keeping it.

What do you like to make once the weather turns cold?

Last week we enjoyed:

Stuffed French Toast

Sopa Aguada de Fideo with cheese quesadilla’s (basically the Mexican version of noodle soup and grilled cheese)

This week we have planned:

Breakfasts:

Eggs, toast and  fresh fruit

Cereal with berries

Potato pancakes with avocado mash and eggs (recipe to come)

Dinners:

Texas Soup

Pork Chops with okra and side salad

Snacks and desserts:

this cooler weather has my craving my favorite pumpkin, so I might have to make something, not sure what yet.

  1. We call this taco soup here, and my kids keep begging for it but it is still too hot here, 100 today, blah! We like to add chopped canned jalapenos and avocado on top as well as the sour cream and cilantro and chips! Oh so yummy! With the left overs we strain some and use it for taco salad! Makes the best taco salad ever!

  2. Looks like a great menu! I have been craving something pumpkin also and I am not much of a pumpkin eater lol, I found a recipe for a pumpkin cheesecake on betty crocker website, it uses bisquick which I have a ton of from the deal at HEB.

  3. @Trisa, Love your variation Trisa!! I love to make mine spicy too by using hot rotel, but I do have some canned jalapeno’s great tip!

  4. @Amber, Oh yum, pumpkin cheese cake using Bisquick, very interesting!!

    I was thinking maybe a soup, pumpkin bread or roll. Oh the possibilities.

  5. Sounds like a great week! I was craving pumpkin too. I made some Pumpkin Chocolate Chip Cookies. They turned out really tasty. I’m posting 10 pumpkin recipes I want to try for tomorrow. One down and 9 more to go! I’m loving this cooler weather too. Just a few more degrees for soup weather!
