A simple, yummy, and so addictive Christmas treat!  Another family recipe from my aunt Mary Ann and my Mom has been making it for years.  Mom usually skips one step and buys the big pre-popped flavored bags of popcorn and uses it.  For this recipe I made freshly popped corn, because it’s what I have and I love it.  But use pre-popped or even microwaved popcorn.  Whatever you prefer, it’s all about the caramel topping’s anyway.  Who knew it was so easy?  Oh, and make two batches because this will disappear in no time at all.

Ingredients: 3 quarts popcorn (½ cup uncooked popcorn, your favorite kind); 1/2 cup butter; 1 cup brown sugar, well packed; 1/4 cup honey; 1 teaspoon vanilla

If popping your own, add 1-2 tablespoons of vegetable oil to a large with lid stock pot.  Add 3-4 kernels and put the heat medium-high.

Once the first kernel has popped.

Add in the rest.  Give the whole pan a good shake covering all the kernels in oil.

And cover, with the lid slightly ajar.  Keep the pan moving, and shaking.

Until the popcorn popping has spaced out 2-3 seconds, remove from the heat immediately.

Uncover and add salt to taste, set aside to cool.

In a medium sauce pan add honey, brown sugar and butter.

Stir until melted.

Then let boil for 5 minutes with out stirring.

Letting the caramel sauce caramelize, see the beautiful color.  After 5 minutes remove from heat.

Stir in vanilla.

Add popcorn to a large sheet pan, and pour caramel over the top.

Stir well.

and bake at 250° for about 1 hour, stirring every fifteen minutes.

The sauce gets evenly distributed and makes it really crisp up.

Then pour out on parchment paper or foil to let cool.

Share with family and friends.

Or you just might be tempted to eat it all yourself!

Caramel Popcorn

3 quarts popcorn (½ cup uncooked popcorn, your favorite kind)
1/2 cup butter
1 cup brown sugar, well packed
1/4 cup honey
1 teaspoon vanilla

Melt butter, stir in sugar and honey.  Bring to a boil.  Boil gently, without stirring, for five minutes.  Remove from heat, stir in vanilla.  Place popcorn in large sheet pan.

Pour caramel over popcorn, stir well.  Bake in 250° oven.  Stir every fifteen minutes, for one hour. Pour hot popcorn on parchment paper to cool.  Cool completely.  Store in Ziploc baggies.

Mom’s tips: I have used the large, pre-cooked bags of popcorn for this recipe and it turns out great.
