I don’t have a new recipe for you guys today, but I thought I would gather some of my personal favorite summer time recipes, I have so many it was hard to narrow down, but here they are.

Desserts:

Banana “Ice Cream”  my not so guilty pleasure, takes just minutes to make and is so delicious.

The ultimate Homemade Vanilla Ice Cream– our families’ favorite and I can’t make enough of this, it’s so good.

Lemon Buttermilk Pudding Cake– a little sweet, a little tangy, my favorite pudding cake!

To make with fresh Garden Veggies or store bought.

Homemade Cooked Salsa– my absolute favorite salsa, ever!  Check out the comments section, I am not alone.

Homemade Salsa

Fresh Tomato and Basil Sauce with pasta- one of the dishes I look most forward to when the tomatoes are perfectly ripe, such bright, delicious flavors and so simple.

Another garden veggie favorite roasted summer squash and tomatoes

Having a party and don’t want to heat up the kitchen cooking, these Banditio dogs are so good and super simple to make, oh and double this recipe because it will be gone in a flash.

How about some Canning and storing ideas:

Salad in a Jar my ultimate lunch, I just love this versatile idea, and so delicious too.

DT’s Favorite super easy refrigerator pickles, no canning involved.

The easiest way ever to freeze all those extra tomatoes you don’t know what to do with, or you don’t have time to can!  Freeze them whole!

Have tons of Jalapenos?  Make Jalapeno jelly, I just love this sweet heat jelly!

How about tons of Zukes?  Make zucchini marmalade, I know it sounds so strange, but it is actually really delicious and fun to make too!

  1. The banana ice cream looks wonderful! I will have to try it. I did try to freeze bananas whole like that once for smoothies, but it seemed like the peels would not all come off. Like a layer was sticking to the banana. Do you have a secret for this? Maybe I will just have to cut them up next time.

  2. Cutting them up before freezing is definitely the easiest solution. But when I have them whole, I just pop them in the microwave for about 5-10 seconds and it softens the skin so it’s easier to remove.

    But you know what? A long with a slice of the Lemon Buttermilk Cake would be ever better :):)
