Trucker Cookies

1 cup butter flavored shortening, softened to room temperature
1 cup packed brown sugar
1 cup white sugar
1 tablespoon milk
1-1/2 teaspoons vanilla extract
2 large eggs
1 cup Rice Krispies cereal
2-1/2 cups rolled oats
1-1/2 cups all-purpose flour
1-1/2 teaspoons baking soda
1 teaspoon salt
1 cup shredded, sweetened coconut
1 cup chopped pecans or walnuts (optional)
1 cup chocolate chips

Preheat the oven to 350 ℉.

Cream together the shortening and sugars until light and fluffy. Add the milk, vanilla, and eggs; beat well. Add in Rice Krispies and rolled oats. Add the flour, baking soda, and salt; mix. Fold in the coconut, nuts, and chocolate chips.

Place tablespoon-sized balls of dough on a lightly greased or lined cookie sheet and bake for 10-12 minutes, until lightly golden around the edges.

Makes 3-4 dozen cookies.

  2. This recipe sounds delish. Kinda reminds me maybe of a cookie mom used to buy at our local bakery when I was growing up. Definately going to add that to our Christmas Cookie giveway!
