We love Mexican food around our house and I was in search of a great way to use some of our garden veggies, and I thought spinach enchiladas, perfect.  For this recipe I used what I had on hand but it would be much better with corn tortillas not flour, but if you like flour more then by all means go ahead!  The boys really liked this recipe and I think its a good way to get your kiddos to eat their greens.  The  spinach went very well with the creamy cheesy sauce and chicken.  We will be making this again for sure!

Ingredients: 1 Cup chopped onion (I used green onion), 3 Cloves garlic, 2 cups cooked chicken (sticky chicken), 3 cups fresh spinach, 1/2 cup sour cream, 1/2 cup cream cheese, 1 can enchilada sauce, 1 1/2 cups shredded cheese, 12 tortillas

Add 1 T olive oil to pan then add chopped garlic and onions for about 3 minutes

Then add fresh spinach and cook till slightly wilted

Then add cream cheese and sour cream

And 1 cup of cheese, cook until melted then add chicken

Spoon a spoonful of mixture on tortilla, roll and place in casserole, I poured any remaining chicken mixture on top

Then spoon on sauce, and add remaining cheese

Bake @ 350 for 20-25 minutes

Creamy Spinach and Chicken Enchiladas

1 cup chopped onion (I used green onions)

3 cloves garlic

2 cups cooked chicken, chopped or shredded

3 cups fresh spinach

1 cup sour cream or cream cheese

1 can enchilada sauce

1 1/2 cups shredded cheese

12 tortillas-corn or flour

Add 1 T olive oil to pan, cook onions and garlic until softened then add spinach till slightly wilted. Add cream cheese, sour cream and 1 cup cheese cook until melted, then add shredded chicken and mix well.

Spoon chicken mixture into tortillas and roll up. Place in 9×13 pan. Top with sauce and cheese. Bake uncovered at 350 for about 25 minutes.

  1. This looks so yummy! I wonder if I could get my kids to eat it. They usually won’t touch anything with spinach in it so I’d really have to hide it in there!! They loved the other enchiladas I made from your recipe list so I might be able to pull off these spinach ones!

  2. this sounds yummy. I just made chicken enchiladas on saturday. I can’t remember if I posted the recipe or not. I think it’s in my archives. This would be good with a white sauce as well I bet.

  4. Have the enchiladas in the oven, will let you know what BB and AB think. Saw the recipe this morning and had to make them for supper. I used a roasted chicken from WalMart. Serving with spanish rice and a caesar salad. Please post more pictures of my great nephews, I really miss them. Aunt SueSue

  6. Wanted to let you know – last night I was inspired by this post and recipe and decided to make some Spinach Enchiladas. I remembered most of what you used (I didn’t have it all, but had some substitutions), mixed them, and now have dinner in the fridge ready to be heated! It’s wonderful!

  7. Ok we made these last night. YUM!!!! I omited the chicken and used Green enchilada sauce instead of red but it was YUMMY!!! You can tweak this in so many different ways. Thanks for sharing and this is definitely in my keeper file!!!

  9. thanks so much for this! i made it and it was perfect! well, i didnt have the sauce on hand, so i compromised with a taco-sauceish mixture, which was great. But OH that creamy filling mmm. My husband saw what was on his plate and it went like this hubby: “whats that?” me: “creamy spinach encilladas”… hubby: “Oh no, oh im sorry but I cant stand enchilladas, i dont know if i can eat this” me: “okay well have a mouthful first and then decide” hubby: “oh… okay” *takes a miniscule mouthful with a look of dismay on his face…munch munch…”Hey these are nice…they arent enchilladas!” hahahaha. He ate it and we were so full we couldnt finish it…so he took the leftovers to work! thanks so much! will be putting this in my recipe file!
