  2. I’ll take one of each, please! Seriously, those all look so good. I’m going to poke around at the pumpkin enchilada and chowder, especially. And I don’t often see others making their corn muffins with pumpkin, but I do, and I love it that way.

  4. Pumpkin Oatmeal is a great and delicious way to start the day.
    (Stir in some pumpkin puree into the oatmeal while it is cooking, along with some cinnamon. Optional add-ins: dried cranberries and chopped nuts. I usually make my oatmeal in the microwave.)
    I’m sorry I can’t provide measurements, as I just sort of eyeball the amount – probably a tablespoon or two per serving.
