Almost a whole year ago I made this glorious cake for my Granny’s birthday, somehow, between all the shuffle it was forgotten.  Until yesterday as I was looking through old pictures, the memories came back.

This cake is ooey gooey, coconut-y, almond-y, joyous, oh just not enough adjectives to describe it.

The cake starts off simple with a chocolate cake box mix, baked according to directions, but then it is soon transformed.

It will not disappoint.

1 box chocolate cake mix, Filling: 1 c. evaporated milk, 1 c. sugar, 24 lg. marshmallows, 1 (7 oz.) bag Angel Flake coconut, Topping: 1 1/2 c. sugar, 1/2 c. evaporated milk, 1/2 c. butter, 1 1/2 c. chocolate chips, 1 c. almonds

In a medium saucepan over low heat, add the evaporated milk,

sugar,

and exactly 24 large marshmallows.

25 would be too much, 23 not enough. Not really.

Bake the chocolate cake as per boxed instructions.

After removing baked cake from oven, and while still warm, poke holes into the cake with the handle of a wooden spoon.

So all the ooey gooey marshmallow creme can seep into the cake.

Once the marshmallows have melted,

add in the coconut and mix well.

Then pour over the cake.

And watch it melt into the cake.  Try your best not to dig in, we still have an important layer to add.

In a medium sauce pan, melt 1 stick of butter

Add sugar,

Evaporated milk,

and mix together, until sugar and butter are combined.

Then add in the chocolate chips, and cook until they are melted.

Add in 3/4 cup of almonds, mix well.

Pour the chocolate over the cake.

And sprinkle with the remaining almonds.

Now you can dig in.

I just had to share this sweet picture of my grandparents from last year.  Miss you Pop-po.

Now just look at this, it’s almost too much to handle.

I must make this again.

1 box chocolate cake mix
Bake as directed on box.
Filling:

1 c. evaporated milk
1 c. sugar
24 lg. marshmallows
1 (7 oz.) bag Angel Flake coconut

Combine milk and sugar; add marshmallows and heat until melted. Add coconut. Poke holes in the cake using the handle of a wooden spoon, then pour over cake while hot.

Topping:

1 1/2 c. sugar
1/2 c. evaporated milk
1/2 c. butter
1 1/2 c. chocolate chips
1 c. almonds

Mix sugar, butter, and milk. Bring to a boil, add chocolate chips, stir until melted. Add nuts 3/4 cup of nuts. Pour over cake. Then sprinkle remaining nuts on top of the cake.

  8. I bought most of these ingredients the other day to make a valentine cake for my husband. He loves mounds and almond joys. I had planned on trying to make a heart shaped cake, but this looks too good not to try. I think he will love it.
