Happy Memorial day!  We celebrated at my parents by having another great crawfish boil.  You know because every great holiday has to be accompanied by great food.  Oh and my Mom made an awesome peach cobbler that I will have to get the recipe to share with you all.  DT is going to be home most of this week as he was suppose to last week but ended up working.  So we have lots of garden veggie meals planned, a trip to the water park and possible the beach.  Not to mention some work on the chicken coop and his truck, poor thing he doesn’t get a break.

Last week we enjoyed:

Zucchini Cakes

Bandito dogs with cucumber salad

Fish baked in foil

Easy Refrigerator Pickles

This week we have planned:

Breakfasts:

Mushroom and Egg Casserole

Cereal with fresh berries

Waffles with bacon and eggs

Dinners:

Sloppy joes with zucchini cakes

Photobucket

Pan fried steaks with PW’s restaurant style potatoes
Barbecue bundles (recipe to come)
Pork chops with green beans and squash (all from the garden)

Desserts,  Snacks and Drinks:

  1. how wonderful that you have all these fresh garden veggies!! Awesome. I LOVE refrigerator pickles 🙂 Can’t wait for mid-summer when they are ready around here!

  2. Wow! I can’t wait to see your recipes for the Zucchini Marmalade. My dad just gave us some HUGE yellow and green zucchini along with some yellow summer squash. I shredded it up to try your zucchini cakes and to make some zucchini muffins.
