This is surely turning into one of my favorites ways to make zucchini.  My niece, one of the pickiest eaters I’ve ever known, ate about half the pan.  Even after we told her they had zucchini in them, she loved them.  Truth be known the zucchini melts into these brownies and you can’t taste it at all.  These brownies are much more brownie like (than Zucchini Brownies I), and the chocolate chips melting into the brownie creates a extra bit of chocolaty goodness.

Ingredients: 1 3/4 cups flour, 1/3 cup baking cocoa, 1/2 tsp salt, 1/2 tsp baking soda, 2 cups zucchini (shredded), 1 egg, 3/4 cup sugar, 3/4 cup brown sugar, 1/2 cup sour cream, 1/2 cup oil, 1 tsp vanilla, 3/4 cup semisweet chocolate chips

In the stand mixer, mix together all the dry ingredients: flour, cocoa,  salt and baking soda.

Then grate the zucchini using the large hole cheese grater.

No need to squeeze the excess juice from the zucchini, this helps keep the brownies moist.

Go ahead and add the zucchini to the flour mixture.

Mix until just combined.

In another large bowl, add all the wet ingredients:  egg, white sugar, brown sugar, sour cream, oil, and vanilla. Mix well.

Then add the wet ingredients to the dry, and mix until fully incorporated.

Pour into a sprayed 9X13 pan.

Sprinkle chocolate chips on top, and bake at 350 for 35-40 minutes, until a toothpick comes out clean.

When they are done set them out to cool a bit before serving.

Which is hard to do, these smell heavenly.

Enjoy, plain or with a cold glass of milk, yum…..

Zucchini Brownies II

1 3/4 cups flour
1/3 cup baking cocoa

2 cups zucchini (shredded)

In a separate bowl, combine egg, sugars, sour cream, oil, and vanilla with a fork. Mix in to zucchini mixture.
Pour into a sprayed 9 x 13 and sprinkle chocolate chips on top and bake at 350 until a toothpick comes out clean (35-40 minutes).

  1. Shut the front door!!! OMG, I’m soooooo making these!!!!! I’ve been craving chocolate these last few days but couldn’t find any way possible to justify cheating on my diet. Looks like I can have the best of both worlds with these….chocolate AND veggies all in one!!!! Yay!!
