When I first saw the Crazy Cooking challenge for the month, I was excited psyched, I mean who doesn’t love a grilled cheese sandwich.  But when Galley Kitchen did her month long grilled cheese challenge and her Jalapeno Popper Grilled cheese came along, I knew that was the one for me.  I love Jalapeno Popper’s, love them.  I mean they are the whole reason we grow jalapeno’s. Ok, well almost the whole reason.

This grilled cheese met my every expectation, super easy, quick to make, as a grilled cheese should be.  And so very satisfying, down to the crispy last bite of butter grilled bread.  Yum!

Ingredients: 2 slices white bread; butter; 2 slices bacon, cooked; 2 slices Cheddar cheese; 1 ounce cream cheese; 5-6 slices pickled jalapeno, diced (more or less to taste)

Take several jalapeno’s and give them a rough chop, we used about 10, but this was enough for 2 grilled cheeses.

Add them to the softened cream cheese, and mix well.

Then butter 1 side of each slice of bread.

Put your pan on medium high heat, and place one slice of the bread buttered side down.

Add 1 slice of cheese, and the bacon.

Then add the cream cheese mixture on top of one slice of cheese, and spread on evenly.

Place it on top of the rest of the sandwich.

And top with the other slice of bread, buttered side up.

Cook on each side, about 2-3 minutes, until the bread is golden brown and the cheese is all melted.

Remove from the pan, and slice immediately and eat.

The sandwich is so delicious with your favorite beer.

The the meaty bacon, gooey cheese, the crunch of bread, the creamy spiciness of the jalapenos.  My mouth was in heaven.  Exactly like a jalapeno popper, should be.

Slowly savoring each bite!  Make this now, you won’t be sorry!

Jalapeno Popper Grilled Cheese

Recipe from Galley Kitchen

2 slices white bread
Butter
2 slices bacon, cooked
2 slices Cheddar cheese
1 ounce cream cheese
5-6 slices pickled jalapeno, diced (more or less to taste)

Combine cream cheese, and jalapenos in small bowl. Mix until smooth.  Butter 1 side of each slice of bread.  Set pan to medium high heat.  Place 1 slice of bread butter side down on the pan, top with 1 slice of cheese, bacon, and spread cheese mixture on one slice of cheddar.  Place on top.  Place last slice of bread on top buttered side up.  Cook on both sides until cheese is melted and the bread is a golden brown, 2-3 minutes per side.

  5. Great minds think alike! I made a Jalapeno Popper Grilled Cheese for the Challenge, too … but it’s a bit different than this one. It used roasted fresh jalapeno peppers, and included chopped green onions in the cream cheese layer. Divine!!! Love your choice! 🙂

  7. Great minds think alike! I did a jalapeno popper grilled cheese for mine too (CCC #33)! Next time, I’ll have to make one that I don’t like as much as these popper sammies – I’ve been thinking about them no stop and seeing yummy ones like yours isn’t helping, lol!!
