I always love something perfectly sweet to dip into my hot morning coffee.  These Biscotti fit the bill perfectly.  Surprisingly simple to make and a fun way to eat a cookie biscuit!!

They are double baked, and that allows for the extra crunch, though they aren’t too hard.  The fun with this recipe is that it is easy to switch around the ingredients.  If you don’t care for chocolate, use cranberries, or apricots.  Don’t have almonds, try pecans.  Play with it to your liking.  My favorite is Cranberry/Almond combination.

This recipe was shared with me by my brother’s girlfriend’s mom (confused yet?).  She made these to go on a trip to the water park, and I probably ate 20 of them.  So I begged and pleaded for the recipe, and here it is!

Best part is the recipe makes plenty and they freeze well!

Let’s start baking!

Ingredients: 1 cup sugar, 1 cup oil, 3 large eggs, 1 teaspoon almond flavoring, 2 1/2 cups flour, 1/2 cup chocolate chips, 1/2 cup almonds, chopped

I used 1/2 cup almond and 1/2 chocolate chips, but next time I am going to try 1/2 cup cranberries.

Just sub out the amount used for the chocolate chips.

In the stand mixer, add the oil and sugar, mix well.

Then add the eggs, one at a time,

mixing in between.

Add the almond extract.

And with the beater on low, add 1/2 cup of flour at a time, mixing in between additions, until thoroughly mixed.

Be sure to scrape down the sides of the bowl.

Fold in the chocolate chips and chopped almonds.

Then pour batter into a greased 9 X 13 pan.

Spread out evenly and bake @ 350° for 20 minutes.

Once baked set out to cool, and then cut into 3 sections and then slices.

Then lay out on a cookie sheet cut side facing up,

and bake another 20 minutes.

Let cool.  If possible.

And enjoy with a big cup of joe.

Chocolate Chip Biscotti

1 cup sugar
1 cup oil

2 1/2 cups flour
1/2 cup chocolate chips
1/2 cup almonds, chopped

In a stand mixer, add the sugar and oil, combine.  Then add 1 egg at a time mixing in between.  Add flavoring, and flour 1/2 a cup at a time, mixing in between. Then fold in chocolate chips and nuts.

Spread the batter into a 9 X 13 pan and bake @ 350 for 20 minutes. Remove from oven and slice into 1/2 inch pieces.  I cut mine into 3 sections to make them easier to handle.  Then place on a cookie sheet and bake 20 more minutes.

Notes:  Replace chocolate chips with dried fruits, use different nuts, one of my favorite combinations was cranberry and almonds.
