I created this recipe from a memory.  In high school I went to pasture party  and we stayed out almost all night and the next morning the Mom  of the person throwing the party had cooked a wonderful breakfast casserole with broccoli and cheese. First off let me just say the Mom cooked for a group of kids she just met after allowing a party to go on her land at all hours of the night.  What a women! I don’t think I could or would be this gracious.  Sad thing is I don’t remember the person who had the party or the mom, otherwise I would get the recipe directly from her.  So I decided to create my own.  This is what I came up with and it turned out really well.   The cornbread was moist with the crunch of bacon and a slight hint of sweetness.  Yum!

Ingredients: 1 package maple bacon (if you don’t have maple regular is fine), 1 medium onion, 1 package frozen broccoli, 2 boxes Jiffy corn mix, 1/2 milk, 5 eggs, 8 oz cottage cheese, 1 tsp salt, 1 1/4 cups cheddar cheese, 2 T honey (or just eyeball it)

Chop bacon into smaller pieces to cook faster, add to hot skillet to brown, remove and place on paper towels to drain.

add 1/2 stick of butter to skillet, scrap up any bacon bits, add chopped onion and frozen broccoli

While the veggies are cooking add all your ingredients for the batter

2 packages jiffy, 1/2 cup milk, 5 eggs

8 oz cottage cheese, 1 tsp salt, 1 cup cheddar cheese

and honey- I just eyeballed it about 2 Tablespoons.  Ha, my mom hates when I don’t measure things exactly, so I just had to add this in.  (Hi Mom!)

Mix well

Once veggies are nice and brown, look at that gorgeous color! Add the bacon, and pour the batter on top

Sprinkle 1/4 cup of cheddar

Bake at 375 for 30 minutes or until golden brown!

Sweet Pea’s Bacon and Broccoli Cornbread

2 boxes of Jiffy Corn mix

1/2 cup milk

1 8oz container of cottage cheese

5 large eggs

1 tsp salt

2 T honey

1 1/4 cup grated cheddar cheese

1/2 stick unsalted butter

1 medium onion

1 10 oz package frozen broccoli

1 package bacon (I used maple bacon)

Cut bacon into small pieces and cook in your 10 inch cast iron skillet.  Once the bacon has completely cooked remove from skillet and add 1/2 stick of butter, chopped onions and broccoli, cook until soft.

Preheat Oven to 375

While this is cooking start on the batter.  Mix together all ingredients except 1/4 cup of cheddar cheese. Then add bacon back into skillet and pour the batter on top.  Mix around and add 1/4 cup of shredded cheddar cheese on top.  Bake for 30 minutes or until golden brown.

  1. Thanks so much for the recipe — I’m going to try it Christmas week! I will let you know what I think, but everything in it is stuff I love. (I would’ve thanked you sooner, but I’ve been very much under the weather — I blogged about it, but don’t read it if you’re squeamish!)
