For DT’s birthday I decided to make him birthday cake pancakes.  I saw this genius idea in Rachael Ray’s August Magazine.  You simply make any box cake mix or homemade cake mix, mix the eggs, water and oil, make your pancakes with the batter, choose the icing of your choice, mix in a little milk to thin it and pour it on top.  Sure, it’s a rather sweet breakfast, but a special fun way to celebrate.

For my pancakes I used the Party Rainbow Chip Cake mix and the party chip icing (that was my favorite cake as a kid).

I mixed the cake as per box directions.

Buttered my griddle,

and used a 1/3 cup measure to pour out the “pancake” batter.

I cooked them 2-3 minutes, or until bubbles start forming.

Flipped and then cooked a few more minutes.

I piled the pancakes on a cute cake stand.

For the icing, I used canned frosting and added milk until it was easy to drizzle.

 

Then drizzled plenty of icing on top of the pancakes.

Until they were just perfect.

We sang happy birthday and thoroughly enjoyed the yummy breakfast treat.

Who says you can’t have cake for breakfast?

The boys had so much fun with this.  I think this will be a new family tradition!

  1. I had thought about doing that for my own birthday but in the end decided to go with Chocolate Cupcakes with Peanut Butter Frosting. Now I’m thinking of doing cake pancakes for my daughter’s birthday this fall. I’m glad you had such success with it!

  5. Those are so cute! I was wondering around the WWW looking for cake pancakes made with cake mix. I wanted pancakes or cake and had no pancake mix or desire to make an actual cake. Thanks for the inspiration. I made mine with yellow cake mix and added maple flavoring. No icing for me, though, didn’t feel like going to the store. Plain is good too.
