Day 3 of my Holiday Treats week also happens to be the Food Network Chef’s Challenge hosted by I blame my Mother featuring a Ellie Kriegar recipe. Ellie is famous for turning great recipes slightly healthier. Just up my alley.
On another note; Can you believe its been 15 weeks and 15 Food network challenges? Time really flies when your having a great time and I have found so many recipes that I really love. Here are a few of my faves so far: Pasta Bolognese, Mexican Chicken Stew, Blueberry Muffins, and Mini Shepard’s Pie.
I wanted to pick a treat to go with my treats week theme and I thought no better than triple chocolate cookies. They did not disappoint. They were sweet and chocolaty, with a nutty crunch! I love all the chocolate chunks. They would be a great addition to any holiday party.

Ingredients: 1/4 cup butter, softened, 1/2 cup dark brown sugar, 1/4 cup granulated sugar, 1/4 cup canola oil, 1 egg, 1 teaspoon vanilla extract, 1/2 cup all-purpose flour, 1/2 cup whole-wheat pastry flour, 1/4 cup unsweetened cocoa powder (not Dutch processed), 1/4 teaspoon salt, optional, 1/3 cup coarsely chopped dark chocolate (2 ounces), 1/3 cup coarsely chopped milk chocolate (2 ounces), 2/3 cup chopped pecans, optional
Start off creaming the butter and sugars together in the mixer
Then add the canola oil and one egg
beat well and add vanilla
Then add the dry ingredients, whole what pastry flour
regular all purpose flour
and cocoa powder
add in some salt as well, just eye ball it. Then be sure to mix well.
next up coarsely chop the chocolate
and pecans
and add both to the the cookie dough, stirring until just mixed.
Then scoop about a tablespoon of batter onto cookie sheet and bake for 12 minutes on a ungreased cookie sheet at 350.
Transfer to rake to cool.

Triple Chocolate Cookies

Ingredients
1/4 cup butter, softened
1/2 cup dark brown sugar
1/4 cup granulated sugar
1/4 cup canola oil
1 egg
1 teaspoon vanilla extract
1/2 cup all-purpose flour
1/2 cup whole-wheat pastry flour
1/4 cup unsweetened cocoa powder (not Dutch processed)
1/4 teaspoon salt, optional
1/3 cup coarsely chopped dark chocolate (2 ounces)
1/3 cup coarsely chopped milk chocolate (2 ounces)
2/3 cup chopped pecans, optional
Directions
Preheat the oven to 350 degrees F.
In a large bowl, mash together the butter and sugars with a fork until well combined. Add the oil and egg and beat until creamy. Mix in the vanilla.
In a medium bowl, whisk together the flours, cocoa powder, and salt. Add the dry ingredients to the wet ingredients and mix well. Stir in the dark chocolate, milk chocolate, and the pecans and mix well. Using a tablespoon, scoop the batter onto an ungreased cookie sheet. Bake for 12 minutes. Transfer cookies to a rack to cool.
