Super Easy Cobbler

Every summer I look forward to my dad picking dewberries, they grow wild near my dad’s rice farmers and we just love them.  They are sweet with a slight bite of tartness, sweeter than a blackberry and slightly smaller.  My dad absolutely loves dewberry cobblers and who am I to deny his request.  Much less this cobbler takes about 5 minutes to throw together and is simply good by itself or a la mode.    This recipe can easily be used with any sweetened fruit.  We clean our dewberries very good, then put half a cup of sugar on them mix well and let it macerate in the fridge over night in a lidded container.

Ingredients: 1 stick butter, 1 cup flour, 1 cup sugar, 1 tsp. baking powder, 2/3 cups milk, 1 quart sweetened fruit

In a mixing bowl, add flour, sugar

and baking powder, mix well

then add milk and mix till incorporated

Melt 1 stick of butter and pour into baking dish, I use a 13 X 9

Then pour flour mixture into baking dish on top of butter, just pour it on top no need to worry about mixing or stirring it.

Then spoon sweetened fruit evenly on top

Bake at 325 for 1 hour or until golden brown on top

Serve immediately with ice cream and enjoy!

1 tsp. baking powder

2/3 cups milk

1 quart sweetened fruit

Mix flour, baking powder and sugar; add milk. Melt butter an pour in deep baking dish add flour mixture on top.  Pile the fruit on top and bake at 325 for about an hour or until golden brown on top.  This is good with any sweetened fruit.  Will rise while baking.
