A fun classic style meal in our household, sloppy joes and corn fritters. Could you get more county than that? Slapped on a open face slice of bread, oh we just love it. And this recipe is a twist on the old package stuff that I promise you will never ever use again. One thing I love about this meal is I almost always have the ingredients on hand, and to me that is a huge plus in my cooking world. The sweet, tangy filling sloppy joes go great with the crispy fried sweet corn fritters it will send you straight back to 1985, you know the hey day of sloppy joes.
Start off by chopping the onion and bell pepper, take the bell pepper and cut around the stem
Pull the stem out and cut bell down the middle, remove with white membrane and seeds
Julienne and then dice
Add ground meat, onions and bell peppers to hot skillet to brown and soften
Then add 1 tsp salt, and 2 T brown sugar
1 T vinegar(any vinegar you like, I used red wine) and 2 T prepared mustard
Then add 3/4 cup Ketchup and stir well
Cover and simmer on low for about 30 minutes
While the sloppy joes are simmering start on the corn fritters:
Ingredients: 1 can corn or frozen, 3-4 green onions, 1 egg, 1/2 cup plus 2 tbsp. flour, 1/2 tsp baking power, 1/2 tsp salt and 1 egg white beaten stiff.
Drain canned corn, or you can use frozen thawed corn
Add green onions, and corn to food processor and chop, I like to leave a little bit of chunkiness
In a mixing bowl add flour, baking powder and salt
In mixer add 1 egg white, and mix until stiff
Pour corn mixture into larger mixing bowl, add 1 egg
Stir until combined and then slowly add flour mixture in
Lastly fold in stiff egg white
In a large skillet pour oil till covers bottom and turn heat to high, you can tell when the oil is hot when you test with a little flour and it immediately sizzles
Drop 1 spoonful of corn mixture into skillet until bottom browns about 2-3 minutes
Then flip and brown again for a couple of minutes and set aside on paper towel to drain
Then enjoy your piping hot fritters and sloppy joes!!
Sloppy Joes
1lb ground beef
1 green pepper, chopped
1 onion, chopped
3/4 cup ketchup
2 tablespoons prepared mustard
1 tablespoon vinegar
2 tablespoons brown sugar
1 tsp saltIn a skillet brown the beef, pepper and onion until juices run clear; drain fat. Combine and add to skillet the remaining ingredients. Cover and simmer for 30 minutes.
Corn Fritters
1 canwhole kernel canned corn (chopped and drained)
1 egg
1/2 cup plus 2 tbsp. flour,
1/2 tsp baking power,
1/2 tsp salt.
1 egg white beaten stiff.Add one egg to the drained corn. Mix together the dry ingredients, then stir it into corn mixture. Lastly, fold one egg white beaten until stiff into the mixture.
Drop from a tablespoon into oil heated to 370 degrees. Cook until lightly browned. Drain on paper towel.
