Easy Cherry Pie

Sometimes desperate times call for desperate measures.   You know the time you were so good at the 4th of July celebration that you hardly touched anything sweet.  Then you leave feeling so hungry for something sweet you absolutely have to make something, like a refrigerator pie. (or you probably don’t but I will pretend everyone suffers from this)  But then you realize you don’t have the normal fridge pie making ingredients, so you search in the cupboards and come up with this surprisingly delicious pie.  This was me Saturday evening, making this pie, searching, huffing and puffing around the kitchen, and pleasantly surprised how good it turned out.  DT kept saying over and over, you make this?  You came up with this all on your own?  I just love how confident he is with my recipe creating skillz!  But I must admit I was pretty surprised at how good this turned out, I absolutely love the crust, way better than graham cracker crust!! Way better.

Ingredients: 20 vanilla cookies, 4 T butter, 1 can cherry pie filling (or any pie filling would be great), 1 can sweetened condensed milk, 1 T lime Juice,  1 9 inch pie plate

Put cookies in a food processor and grind until finely crushed ( or crush old fashion way in a plastic baggie and a mallet)

Melt butter

and pour both cookie crumbs and melted butter into pie plate

Mix well and the press down to form crust

Then bake @ 350 for 5-7 minutes

Once the crust if finished remove to cool and start on the filling

add 1 can of sweetened condensed Milk

half the can of cherry filling

and 1 T lime juice

Mix well

Then pour on cooled pie crust and smooth

Refrigerate for at least 1 hour, then slice.

Enjoy with a little extra pie filling and cool whip!

Might not be the prettiest pie, but sure did taste great!

4 T butter

1 can cherry pie filling (or any pie filling would be great)

1 can sweetened condensed milk

1 T lime Juice

1 9 inch pie plate

Place cookies in food processor until finely crumbled, then add melted butter, mix well, and press into pie plate.  Then bake at 350 for 5-7 minutes.  In large bowl mix sweetened condensed milk, 1/2 pie filling and lime juice.  Pour into cooled pie shell and refrigerate for at least 1 hour.  Serve with pie filling and cool whip!
