Crock-pot Roast w/ Potatoes & Carrots

One of my favorite super quick, easy 5 ingredients recipes is a crock pot roast with potatoes and carrots.  Every time I make this my family the boys included just gobble this up like its the best thing they’ve ever had, and I am a super hero for knowing how to make something so delicious.  What can I say I have 3 meat and potato kind of guys so they love, love, love meals like this.  And what the hey, I love making these because it is so easy and good.

I came across this really neat trick from Lynn @ Kitchen Adventures, and I knew I had to try it.  She uses a foil packet to separate the potatoes and carrots from the roast, so they don’t get over cooked and mushy or greasy from the cooked roast drippings.  More details below.

Ingredients: 3-4 lbs Roast, 1/2 cup Jalapeno Jelly (or any type of jelly), 1 Packet Onion Soup Mix, 4-5 potatoes, peeled and cubed, and 1/2 bag baby carrots

Peel and cube potatoes

Place on 2 large sheets of foil and add carrots, salt and pepper

Then fold foil up and then down

Then the sides up and seal tightly

Place roast into crock pot, and pour 1/2 cup jalapeno jelly (you can use sweet & sour sauce, or any jelly), and onion soup mix.

Rub mixture into every nook and cranny of the roast.

Then place foil packet on top of roast and set crock pot on high for 4-6 hours, or low for 6-8

The roast will put off lots of excellent juice be sure to pour some on top of the veggies

Crock-pot Roasts with Potatoes and Carrots

3-4 lbs Roast

1/2 cup Jalapeno Jelly (or any type of jelly)

1 Packet Onion Soup Mix

4-5 potatoes, peeled and cubed

1/2 bag baby carrots

Take roast  frozen or thawed, place into crock pot.  Pour on 1/2 cup of jalapeno jelly, then pour on top the onion soup packet, rub into jelly and all over roast.  Peel, and cube potatoes, place on 2 large sheets of foil, then pour on top 1/2 bag baby carrots, salt & pepper to taste.  Seal up foil and place on top of roast.  Turn crock pot on high for 4-6 hours or low for 6-8 hours.   Remove from crock pot and pour some of the roast dripping onto potatoes and carrots.  Enjoy.
