Blueberry Waffles w/ Maple Syrup

Sugar and Gluten Free!

Back in my sugar and gluten free days I made this wonderful recipe and then simply forgot about it, until yesterday when I was searching through some of my old photos.  This recipe is too good not to share, I will include directions using gluten and sugar as well.

The waffles are light and fluffy with a great texture and taste and the syrup is excellent.  In fact I haven’t bought syrup in over a year.  I just always make my own, it’s so simple.  Sugar free or not.

Waffle Ingredients: Gluten free flours = 1 cup GF Baking Mix and 3/4 cup starch I used Brown rice flour) or for NON gluten free baking 1 3/4 cup all purpose flour, 2 tsp. baking powder, 1/2-1 tsp. salt, 1/4 cup applesauce, 1 T Agave syrup, 1 egg, 1 3/4 cup milk, 3/4 cup blueberries

In a medium mixing bowl add the dry ingredients, whisk together. Start your waffle iron.

In a separate mixing bowl, add the wet ingredients, mix well.

Then mix the dry to the wet until just incorporated.

If over-mixed the waffles will be flat and hard.

Add in the blueberries with only a couple of turns.

On the heated waffle iron, pour on the batter and cook per waffle iron instructions.

Cook until lightly golden brown perfection.

While the waffles are baking, let’s get started on the simple maple syrup.

Maple Syrup Ingredients: 1 cup Water, 1 T cornstarch, 1 cup Agave (or 1 cup white sugar), 2 tsp maple flavoring

In a medium saucepan over medium heat add the water,

cornstarch

and the agave, stir ingredients together.

bring to a boil and once the syrup slightly thickens,

Remove from heat and add in the maple flavoring. Stir and serve.

Pour the hot syrup over the hot waffles,

ohh the smell is intoxicating.

Blueberry Waffles (Sugar and Gluten Free)

Gluten free flours 1 cup GF Baking Mix
3/4 cup starch (I used brown rice flour)
or for non gluten free baking 1 3/4 cup all purpose flour
2 tsp. baking powder
1/2-1 tsp. salt
1/4 cup applesauce
1 T Agave syrup
1 egg
1 3/4 cup milk
3/4 cup blueberries

Whisk dry ingredients. Whisk wet ingredients into dry. Pour onto (greased) waffle iron.  Cook per waffle iron instructions. Take off waffle iron. Enjoy.

Maple Syrup (Sugar Free)

1 cup Water
1 T cornstarch
1 cup Agave (or white sugar)
2 tsp maple flavoring

Combine first 3 ingredients, whisking together, bring to a boil, remove from heat and stir in maple flavoring.  Pour on top of waffles and enjoy!  Can be store in lidded container and kept in the fridge for a month.
