Blackberry Cobbler (Sugar and Gluten Free)

On my first day of my new sugar free and gluten free (sf & gf) diet I decided to bake a cobbler. I had just purchase gluten free flour and agave which is a natural sweetener. Mind you  I have never made sf or gf dessert in my life, but I was determined and thought I could pull it off. So I halved my recipe for Cobbler and changed the ingredients a bit.  It was really easy and so fun to play around and create this recipe.  But the best part is that DT and I both really loved the result.

The cobbler had a wonderful nutty full flavor and the berries really stood out.  We didn’t miss the sugar or flour at all.  In fact in DT’s exact words were (he’s been a bit reluctant about this diet) “If this is how were going to eat I can do this every day”.  I was very happy with the result and my first day of sugar and gluten free eating.

Let me show you how simple this recipe is.

Ingredients: 1/2 stick butter, 1/2 cup gluten free all purpose baking flour (I used Bob’s Red Mill), 4 T agave nectar, 1 tsp. baking powder, 1/2 cup  milk, 2 cups berries

For my gluten free flour I used Bob’s Red Mill which contains garbanzo flour, potato starch, tapioca flour, sorghum flour, and fava flour.

and OhGave! Blue Agave which is slightly sweet with the texture of honey, its really good.

First off melt 1/2 a stick of butter in your pie plate

Isn’t this pie plate beautiful?  I got it from a etsy seller, it just spoke to me!

It’s very beautiful and well made.

So melt your butter I just popped it in the microwave for a 30 seconds.

Then in a small bowl, add your flour

and baking soda, mix well

then add in your wet ingredients, milk

and agave nectar

mix well

then immediately pour on top of your melted butter as the flour mixture will start to bubble.

then toss in your berries, I choose these gorgeous blackberries

spread them out evenly and bake at 325 for about 30 minutes, or until golden brown

Then control yourself.

Oh who am I kidding, just dig in!


Super Easy Cobbler

1/2 stick butter

1/2 cup gluten free all purpose baking flour (I used Bob’s Red Mill)

4 T agave nectar

1 tsp. baking powder

1/2 cup  milk

2 cups berries

Mix flour and baking powder; then add milk and agave. Melt butter and pour in pie plate add flour mixture on top.  Pile the fruit on top and bake at 325 for about 30 minutes or until golden brown on top.  This is good with any fruit.  Will rise while baking. If wanting a little extra sweetness drizzle on some agave or honey.
