Fun week planned this week, starting a new workout video.  Can you believe I get excited about starting a new workout video?  Crazy I know.  Working my tail off all week so I can party all weekend, because this weekend will be DT’s and my 6th wedding anniversary!!  We are planning a fun weekend getaway.  I can’t wait.

Last week we enjoyed:Thai Turkey Tacos

Baked Sweet and Sour Chicken

Chicken Enchilada Pasta (recipe to come)

Crockpot Jambalaya

Breakfasts:

Bird’s nest with fresh fruit

Dinner:

Coconut Shrimp Curry (picture and recipe courtesy of Wishful Chef) Love this recipe so much, I think I’ve made it 3 times in the past month.  Yum!

Goulash lightened up a bit.
