Breakfast Pizza

I ran across this unique pizza recipe on Pinterest and knew I had to try it.  I am in constant search for new and unique ways to eat eggs, and this has everything my family loves, so it was a must try, in my book.

The boys loved helping me make the pizza, and loved the eggs on the pizza.  They thought it was so cool.  A very fun breakfast for dinner meal!

Ingredients: 1 thin crust store-bought pizza dough, 10 strips bacon, 1 cup grated Parmesan, 1 cup grated mozzarella, 6-8 eggs, salt and pepper to taste, 2 tablespoons minced green onions, olive oil, for brushing.

To start, fry the bacon.

Set to drain and cool on a plate, lined with paper towels.

Meanwhile, roll out the pizza crust on a large baking sheet.

Sprinkle evenly with both cheeses.

Beware of little cheese thieves!

Crumble bacon on top.

And crack the eggs over the pizza, use as many as you like.  I think at least one egg per person is good.

We used 7, and if you see the 2 on the far left, Little W helped crack those.

Bake at 500° for 10-12 minutes.  Keep a close watch on the pizza, it bakes very quickly.

Remove pizza from oven and sprinkle the eggs with salt, pepper and green onions.

The yolks cook thoroughly, so no runny-ness.  If you don’t like that.

Serve.

And enjoy!  We liked dipping ours in salsa.

1 thin crust store-bought pizza dough
10 strips bacon
1 cup grated Parmesan
1 cup grated mozzarella
6-8 eggs
salt and pepper, to taste
2 tablespoons minced green onions
olive oil, for brushing

Preheat the oven to 500.

Fry bacon strips over medium-high heat until crisp. Cool and drain on a paper-toweled lined plate.

Open pizza dough  stretch dough to fit a large baking sheet. Sprinkle with Parmesan, mozzarella, and crumbled bacon. Crack eggs over top and season with salt and pepper. Brush the exposed crust with olive oil.

Bake for 10 – 12 minutes or until eggs are cooked through and crust is golden brown. Sprinkle green onion on top.

What a great idea!!! Runny eggs are my favorite…I tell my kids the yolk is the “goodness” and you better not waste it in our house :)
