Menu Plan Monday

Our garden is overflowing with wonderful veggies, so as always I am making some new and old favorite recipes.  I am going to be really busy in the kitchen this week.  I prefer to eat my veggies fresh, but if I must, I do resort to freezing; tomatoes and shredded zucchini are two that freeze well. My mom has been shredding zucchini in everything, meatloaf, spaghetti, etc.  No one ever It’s  a easy way to add a veggie to your meal and picky eaters will never notice.

What recipe do you most look  forward to in the summer?

Breakfasts:

Scrambled eggs, toast, fresh fruit

Cereal with fresh fruit

Breakfast Taquitos (making extra for the freezer)

Dinners:
Cheesy Vegetable Enchiladas with Mexican Rice (recipe to come)

Fried Green Tomatoes are DELICIOUS! They have a tart flavor that is so yummy! I like to press the slices into panko to give them a crunchier bite. We’re also having German Pancakes this week! Brilliant minds think alike!

I will be curious for that recipe :) Wondering if its different from how I make my pancakes :)

So glad to hear about your levels being at 4. You are very close and I am so happy for you. Are you on the same as myself? 3wks negative, 2 at every other week, then finally monthly? Great news! It is an amazing feeling to get below 5. Thanks for stopping by.
