Menu Plan Monday

The garden is in full produce mode, we picked all the potatoes and have a table full, as well as tons of squash and cucumbers.  So I will be pickling, shredding, freezing and baking a lot this week.  I don’t really mind it because it will be so nice later on to pull baked goods from the freezer and shredded zucchini just ready to use.  DT will also be home most of this week so it will be nice having him around and I will cook bigger breakfasts as a result.  Lots of bacon and eggs, his favorite.  What do you have planned for this week?

Last week we enjoyed:

Crawfish boil

Chocolate Butter cake with the best frosting ever

Chicken Fried Steak with squash

Easy Homemade Pizza, using peppers and squash from the garden

This week we have planned:

Breakfasts:

Piglets with eggs

Cereal with fresh berries

Waffles with bacon and eggs

Dinners:

Pork chops with fried pattypan squash (recipe to come)

Chicken, green beans, cucumber salad, and potato wedges

Bandito dogs with cucumber salad

Fish baked in foil

Oooooh, I totally forgot about the fish in foil recipe!! I have some cod I’m defrosting and I was trying to think of a way to prepare it without needing to bread it! I just love when you post your Monday menu…I can’t think of one week where I haven’t been inspired by you to try something different!

We finally have some very tiny tomatoes on 2 of our plants!!! Your garden is so way ahead of ours but we’re getting there!

Everything sounds delicious! Mind sharing your cucumber salad recipe? I am finally growing some this year, and I think I need a good salad recipe. :)

YUM! Your menu looks really summery and delicious! I can’t wait to try refrigerator pickles. I’ve been keeping all of our store bought pickle jars and spaghetti sauce jars for that very reason.
