
I am back to menu planning after a week off, it felt strange to not have my menu planned, and we unfortunately ate out more and ate more convenience foods like frozen pizza, etc. I wasn’t organized at all or motivated to cook. It was good to take a week off, but I am glad to be planning my menu with some healthier foods and new recipes this week.
This week we have planned:
Breakfasts:
Whole wheat banana pancakes
Dinners:
Cajun Snapper and Shrimp over Bacon Cheddar Cheese Grits with Red Pepper Coulis (recipe to come)
Spaghetti and Salad
Desserts, Snacks and Drinks:
Banana Nut Muffins (Recipe to come)
