Menu Plan Monday

March 28, 2010

Wow what a busy Bloggy Spring Break.  It was good to enjoy the time off the computer, but I missed it.  I missed everyone, and have lots of catching up to do.  What a week.  Unfortunately we didn’t get everything done we would have liked, but the duck/chicken coop is finished, the garden is partially planted, and the taxes are partially finished (I keep hoping the will magically finish themselves overnight).

Last week we had:

Fish Cakes with Sweet Potato chips

Caramel Croissant Pudding

Goulash

Photobucket

and

Sloppy Joe Stuffed potatoes with fresh fruit using this sloppy joe recipe

This week we have planned:

Breakfasts:

Huevos Rancheros
Eggs and Bacon
Smoothies

Dinners:

Ribs with Mac and Cheese and mixed veggies

Montana Mike’s Chicken (recipe to come)

Fish tacos with Lemon Butter Sauce

Easter feast- Mexican Theme = YUM. Serving Enchiladas, Crock-pot Pinto beans.

Desserts,  Snacks and Drinks:

Tres Leche Cake (recipe to come)

Grapefruit Zabaglione

I happen to have some grapefruit in my fridge — maybe I’ll give your grapefruit dessert a try :)

Sounds like a great week! Oh and I got a magazine in the mail and guess what recipe they featured? The broiled grapefruit you used a little while ago…they called it Grapefruit Brulee.
