Menu Plan Monday

Eggs Eggs Eggs! This week’s menu is inspired by the 3 dozen eggs we have in the fridge.  Our chickens are laying 4-5 each day and we almost can’t keep up.  Scrambled or fried eggs in the mornings are getting a bit routine, so I am mixing it up a bit and adding in some new eggy recipes.

Last week we had:

Cherry Mini Cakes

Spaghetti Puttanesca

This week we have planned:

Breakfasts:

Ova in Brodetto:  Eggs in Tomato Sauce (recipe to come)
Fresh fruit and oatmeal

Dinners:

Steaks with sweet potatoes, and Hearts of palm salad (recipe to come)

Pork chops with asparagus and turnip greens

Sticky Chicken

Desserts,  Snacks and Drinks:

I love reading blogs when they do meal planning for the week! I lift so many ideas for DH (yes, he does the cooking, I do the planning & shopping) from posts like yours!

What is chicken “puttanesca”? I’ve never heard of it before!

How did you like the turnips? What do they taste like? I’ve never had them and I’m wary. :)

You know, you could have your friends pay a buck or two for some eggs… offset the cost of chickens and reduce the number of eggs in your fridge!
