We are heading into our  3rd week  on the sugar and gluten free diet and much to my surprise I have  lost about 6lbs, and DT lost 17lbs!!!!!  Yes 17lbs, how is this possible?????  Hmm, sometimes life just isn’t fair.  They say men lose weight easier, but seriously???  Other than that the diet has been pretty easy and I’ve adjusted so far with the occasional craving for bread or ice cream.  But we’ve been eating so many fruits and veggies I am staying nice and satisfied.

Last week we had:

Grapefruit Zabaglione over Mixed Berries

Baked Cabbage

Yogurt and Broiled Grapefruit (recipe and picture courtesy of Amy at Sugar and Gluten Free)

Broiled Grapefruit

Scrambled eggs over asparagus

Beef and Lentil Soup

Crock-pot Roast with Potatoes and Carrots

This week we have planned:

Breakfasts:

Fresh Fruit and Oatmeal

Fruit Smoothies

Dinners:

Roasted and Pureed Cauliflower (recipe to come)

Spaghetti (using spaghetti squash as noodles)

Desserts,  Snacks and Drinks:

Flour less Oatmeal Peanut Butter Cookies (just added oatmeal and omitted sugar)

what a great week! You’ve reminded me that I want to try those breakfast eggs that you made for the FNCCC! And yes, I did the cauliflower for the challenge this week — it’s wonderful.

on the cookies, did you omit just the white sugar?

I omitted the white sugar and added about 1/3 cup agave nectar.
