Chocolate Pumpkin Oatmeal

After spending so much time cooking, searching and obsessing over pumpkin recipes.  I finally found a super easy way to use up those pumpkin leftovers.  You know for all those recipes that call for just 1 cup from a 15 oz can of pumpkin.  This makes a yummy, healthy and filling breakfast.  It’s super fast to cook and is toddler approved.

Ingredients: 2 1/4 cups chocolate milk, 1 1/2 cups oatmeal, 1/4 tsp salt, 1/4 tsp cinnamon, 1/4 tsp vanilla, leftover pumpkin approximately 1/2 cup

Pour chocolate milk (reserving 1/4 cup) into a medium sauce pan, and heat over medium heat

Then add in the salt

oatmeal

and cinnamon, really you could add any other spices you like.  Allspice, cloves, or ginger would all be nice additions.

then cook over medium heat until oatmeal thickens.

Then stir in a vanilla

and pumpkin and stir well.

top off with a little reserved milk

and serve immediately

to your starving heathens

Chocolate Pumpkin Oatmeal

2 1/4 cups Chocolate Milk (reserve 1/4 cup for serving)

Pour milk (reserve 1/4 cup of milk for serving) into sauce pan and heat over medium heat.  Add oatmeal, salt and cinnamon.  Cook until thickened.  Then stir in vanilla and pumpkin.  Then pour a couple of teaspoons of milk over each serving.

Okay, I’ll be trying this because I am still having a hard time eating oatmeal. I love oatmeal mixed into things and I use it all the time. I just can’t get over the oatmeal thing for breakfast. I may try this over the weekend…..hubby won’t approve, he’s not a chocoholic like me but I think my kids will love it!

That looks so yummy and soothing…a great stick to your ribs breakfast. We’re gonna roast our pumpkins tomorrow so I’ll need some good recipes…this looks like a good one!

Haha – guess what’s in my fridge right now… something I didn’t know how to use… that leftover bit of canned pumpkin. Thanks for this recipe… will give it a try today.
