Flourless Peanut Butter Cookies

September 1, 2009

I have a recent and prolonged obsession, desire, need (whatever you want to call it) for peanut butter.  Several months ago I found this recipe and I’ve been hooked, its the perfect fast and super easy fix to my PB needs.  These are like the best PB cookies I’ve ever eaten in my life and guess what they have no flour and just 3 ingredients.  If your a peanut butter fan or just want to eat a super quick and easy and very yummy peanut butter goodness, please go make these you won’t regret it.

Ingredients: 1 cup peanut butter, 1 egg, 1/2 cup brown sugar, 1/4 cup sugar
1/2 tsp vanilla, 1/2 tsp baking soda

This recipe can be easily doubled or tripled.

First off grab a bowl, add your brown sugar

and one egg

the white sugar

a neat tip if you spray your measuring cup with pam the PB comes out easier.

Then add your peanut butter

and baking soda

and vanilla

Mix well- That’s it.  Now if your like me you just might be tempted to eat some now.

Place dollops on cookie sheet and press with fork

Bake for about 10 minutes @ 350

And serve warm with a cold glass of milk

But beware

these cookies

are highly

addicting!!

Flour less Peanut Butter Cookies

1 cup peanut butter
1 egg
1/2 cup brown sugar (or 1/4 cup brown sugar Splenda)
1/4 cup sugar
1/2 tsp vanilla
1/2 tsp baking soda

Mix all ingredients well and drop by tablespoonfuls onto a cookie sheet lined with parchment paper. Flatten with a fork or the bottom of a drinking glass. Bake at 175 C (350 F) for 11 minutes. Remove from the oven and allow to cool for a few minutes on the cookie sheet. Enjoy with a tall glass of VERY COLD milk!

Yield: 16-18 cookies (I make large cookies and usually get about 8-10)

You picked my favorite from the cookie kingdom. Unfortunately for my hips, warm peanut butter cookies with ice cold milk has my name written all over them. I hear the sirens call every time I see them. Your cookies look amazing and even if you are trying to kill me, I hope you are having a wonderful day.

Who knew you could make cookies without flour. What a great recipe to have when you don’t have any flour available. I’m betting my PB-loving hubby would love these.

Love it! I’m a HUGE peanut butter fan, too. I’ll definitely have to give this one a try (great for when I’m low on flour).
