Texas Soup

This is a recipe my family and I have been eating for many years and we absolutely love it.  When we get our first cold spell we always always cook Texas Soup, its just so warm and comforting plus healthy, tasty and easy to make. Which is always a top priority in my opinion.

Ingredients: 1 lb ground beef, 1 onion,1 large can diced tomatoes, 1 can rotel, 1 can kidney beans, 1 can pinto beans, 1 can black beans, 1 large can Hominy, 1 bag frozen corn, 1 packet taco seasoning, shredded cheese, Fritos and cilantro for garnish

Brown meat in large pot

Add Chopped onion, about half way till cooked

Once meat is fully cooked add taco seasoning and mix well

Open all cans

Add tomatoes, Rotel, and pinto beans

Add black beans, Kidney beans and hominy

And bag of frozen corn, if you don’t have frozen corn you can substitute 1 can corn. Mix well

Shred Muester cheese, did I mention I love Muenster cheese? Its so creamy and melts absolutely perfect in this soup.

Cook at medium temp for about 30-45 minutes stirring occasionally

Serve with fritos, cheese and some cilantro!  Enjoy!

1 ground meat

1 Onion, chopped

2 cans chopped tomatoes

2 cans hominy

1 can Rotel tomatoes

1 bag frozen corn, or 1 can corn

1 can pinto, kidney and black beans

1 package dry Taco seasoning

Brown ground meat with onions.

Add taco seasoning to meat.

Add all cans, do not drain.

Simmer for about one hour.

Top with Fritos, grated cheese and cilantro

That sounds wonderful! I’ll have to try it, but will have to hope that dh and dd don’t notice the hominy in it. :-)

We have not made this in a while. It is sooooo good! I keep the ingredients for it handy as a last minute meal. A few years a go we gave out the recipe with all the ingredients to friends.

Sounds great. I have a similar recipe, we call it “Taco Soup”. I will have to try your version with the hominy and black beans. YUMMY. Now, it just needs to get cool here!
